Patisserie instructor to represent Australia in international bakery contest |

Congratulations to William Angliss Institute Patisserie Instructor, Shayne Greenman, who has been selected to represent Australia at the SIGEP Bread Cup being held in Rimini, Italy in January 2012. 12 countries will be competing and Shayne is one of four team members selected to be part of Team Bakery Australia. The selection process was one of observation and communication over three days of intense competition in The Australian Artisan Baking Cup at Food Services Australia earlier in 2011.
Team Bakery Australia will compete in four categories at Rimini in January 2012:
1. Traditional Bread
2. Innovative Bread with a health focus
3. Baked Dessert and
4. An Artistic Centrepiece
Those who attended the William Angliss Institute Patisserie High Tea will have seen Shayne’s collaboration with fellow trainers that represented Australia through an elaborate showpiece made entirely of bread.
