In 2017 William Angliss Institute launched its first masters program, the Master of Food Systems and Gastronomy, providing an opportunity for students to take their learning to another level.

Bachelor qualifications

The Bachelor of Culinary Management is designed to prepare graduates to successfully operate and manage commercial kitchens and culinary enterprises of various scales and complexity. The course is structured to provide students with strong foundations in cookery from classic cooking techniques and menu design to recipe development and sustainable procurement management. These foundations will be enhanced by subjects that explore the evolution of the profession and the relationship between culture and cuisine

Our focus on academic skills and practical knowledge will help students' develop the critical thinking and analytical skills that support cross-disciplinary practice in a diverse and dynamic culinary environment.

The Bachelor of Event Management combines industry-specific subjects that help you develop critical thinking and expertise required by event managers and other event professionals.

Students develop an understanding of external factors affecting the events industry, including cultural and political implications that affect historic, current and future events. You'll be able to choose from Event-specific electives such as Conference and Convention Management, Festivals, and Community and Cultural Events.

The Bachelor of Food Studies is designed for foodies who want to contribute to a more sustainable, ethical and equitable world through food. Using a multi-disciplinary approach, you will gain rich insights into the challenges facing government, industry and communities of how to feed ourselves well.

Exploring the relationship between food, agriculture, policy and health, will help you gain a deep understanding of all aspects of food systems. Site visits to farms, farmers’ markets, community gardens and food enterprises will bring to life the topics and issues that are explored in the classroom.

Specialised and interdisciplinary food studies subjects are designed to provide you with the ability to identify opportunities to positively influence food systems, communicate complex food issues clearly to a range of audiences and engage critically with food policy and legislation.

A Community Engagement specialisation can also be pursued in a final and fourth year.

Bachelor qualifications in Resort and Hotel Management are designed to prepare students to lead and manage in this dynamic environment and equip them with the knowledge to find innovative solutions to the complex issues emerging in the industry.

Students will learn about food and beverage management, resort operations, marketing and revenue management as well as customer service and human resource management. Our focus on a combination of academic knowledge and practical skills will help students develop critical thinking, management and professional skills so graduates can enter the industry with confidence.

Students may undertake the three year Bachelor qualification or choose to specialise in one of the two four year qualifications offered.

Our Bachelor of Tourism and Hospitality Management equips students with the management knowledge, technical skills and insights they will require as industry professionals in the dynamic tourism and hospitality industry. It includes industry specific subjects with a focus on management, including food and beverage service management, tourism attraction management and menu design.

Studies of Tourism at Bachelor level furnish students with a solid understanding of tourism that will underpin a career in this ever-expanding industry. Skills central to working in this field will be developed through the course, including analytical skills, critical thinking, problem solving, research and written and verbal communication skills. On offer are 3 specialisations that enable students to gain a broad contextual perspective of Tourism, a focus on Ecotourism or Tourism Marketing.

The Bachelor of Tourism allows students to gain a broad understanding of the fundamental principles and theories of tourism. Knowledge is developed and contextualised through study of disciplinary areas including operations and risk management, human resource management, marketing, sustainability, and economic and social impacts of tourism practise.

The Bachelor of Tourism (Ecotourism) caters for those who have a keen interest in environmentally sustainable and culturally responsible forms of tourism, while the Bachelor of Tourism (Marketing) teaches fundamental marketing principles as they apply to the tourism context along with practical skills through use of software, online tools, computer simulations, field trips, guest speakers and case studies.

Postgraduate qualifications

Graduate Certificate of Food Systems and Gastronomy
Graduate Diploma of Food Systems and Gastronomy
Master of Food Systems and Gastronomy

Australia’s only Master of Food Systems and Gastronomy is designed to equip graduates with the ability to generate positive change within the food system.

The course explores the challenging problems facing contemporary food systems and cultures.
Students will apply their deep understanding of food production, distribution, policy and consumption to issues of contestation within the food system including social inequity, concentration of power, urban and regional land-use and planning, local economies and citizen health and wellbeing.


Students will refine their critical research and analytical skills as they examine shifting gastronomic narratives and public debates concerning the politics, ethics, cultures and ecologies of food system change.

Students completing four units qualify for the graduate certificate, students completing eight units qualify for the Graduate Diploma, students completing all twelve units qualify for the Masters Degree.

The Masters is usually taken over two years (or part time equivalent).

This course is planned for delivery to domestic students only in 2017.
