Industry Training - Meat Processing


William Angliss holds a reputation within the meat industry as one of the leaders in training delivery. Accredited training programs can be delivered in the client’s workplace or world-class facilities in both our Melbourne and Sydney campuses by experienced teaching staff. The Meat Processing sector has grown into a dynamic and robust industry, and we offer many customised training programs such as short courses, workshops and traineeships to meet these needs and compliment our strong focus on training apprentice retail butchers.

William Angliss Institute enjoys strong links within the meat industry to ensure current trends and demands are met by our training products. We are currently in training partnerships with over 200 meat industry clients including Coles Supermarkets, Meat & Livestock Australia (MLA), Woolworths and Tasman Meats.

The Institute also enjoys strong links with the Australian Meat Industry Council and MINTRAC.

Skill Sets

This five day pre-apprenticeship course is ideal for job seekers and people looking to get a foot in the door of the meat industry. Graduates of this skill set are ready for entry-level positions and have experienced different operational aspects of a processing plant.


Enhance your staff’s skills or refresh their knowledge of up-to-date industry trends with our day workshops.

We can tailor workshops to fulfil your needs including:

  • Smallgoods workshops – enhance your skills in gourmet sausages, smoked or cooked-smoked meats
  • Meat Standards Australia (MSA) Systems – gain an understanding of grading and traceability of beef products plus preparation for audits using best practise MSA systems
  • Chef up your Shop – One day cooking workshop for retail butchers to enhance culinary skills and product knowledge. This program is run by experienced chefs and gives meat retailers enhanced confidence and knowledge to take back to their business.

In addition to the above accredited qualifications, clients can nominate a skill sets (a cluster of units) that suits their business and delivered at the client’s workplace.
