Masterclass on the lake

Eight hospitality students across VET and higher education plus two members  of staff,  Tracey Zammit and Oliver Buddrick attended a Winter Masterclass at Lake House in Daylesford.

The full day of demonstrations and foodie discussion was hosted by Lake House Culinary Director Alla Wolf-Tasker in the state of the art demonstration kitchen at Lake House with some of Australia’s top chefs including Danielle Alvarez from Fred’s- Merivale, Sydney; Donovan Cooke Ryne Melbourne and Justin James from Vue de Monde, Melbourne.

The masterclass included demonstrations, recipes, tastings, baguette lunch, wine and refreshments.
Angliss Student Representative of Events and Academia Martin Stankovic said it was such a great experience to meet and ask questions of four amazing chefs.

“It allowed me to learn different ways to make meals and see new and different equipment and tools that can assist in cooking. I learnt that you cannot just expect to know how to cook something the first time and that you must learn all the different versions of cooking the same product or meal and create your own version of cooking,” Martin said.
Regina Lai said the recipes were interesting and the food was super tasty.

“One really good thing I learnt is that you can make food taste good without adding seasoning and that simple recipes can be made to look super fancy by how you present and style your dish,” Regina said.

Hospitality teacher Tracey Zammit said the students loved watching the chefs currently in industry.

“The students loved tasting foods they have never tasted before like truffles and being in a venue that is well known and acclaimed.   They got to see 1.3 kg truffles that were harvested the same morning. They enjoyed being part of the bigger foodie scene too,” Tracey said.
