A farming feast at Angliss

More than 95 guests joined a Farming Feast at Angliss Restaurant as part of the 2018 Melbourne Food and Wine Festival.


 
The evening began with sparkling sake selected by sake master Andre Bishop in the Angliss rain garden, served with a range of canapés designed by the 'Gourmet Farmer' Matthew Evans and his wife Sadie Chrestman.
 
The Gourmet Farmer designed a shared plate dinner and worked with cookery students to prepare and cook the feast, while Sadie worked with front-of house students and teachers.
 
During the dinner Matthew and Sadie shared their experience of setting up Fat Pig Farm in the Huon Valley south of Hobart, Tasmania.
 
Also supported by Fat Pig Farm chef Kellie McChesney, the dinner included a series of platters including steamed mussels in white wine, cider poached bacon, Sicilian purple cauliflower with parmesan and Italian-style slow roasted pork.
 
During their visit to campus, Matthew and Sadie also had the opportunity to hold a cooking demonstration and speak about restaurant management skills with Advanced Diploma of Hospitality students.
