Which occupations does William Angliss Institute assess?
We assess Baker [351111], Chef [351311], Cook [351411], and Pastrycook [351112]. We are the only TRA-authorised assessing body in Australia for Pastrycook. We support both Western/Commercial Cookery and dedicated Asian Cookery pathways.
What qualifications are aligned to each occupation?
  • Baker [351111]: FBP30421 Certificate III in Bread Baking or FBP30521 Certificate III in Baking (available from Q3 2026).
  • Chef [351311]: SIT40521 Certificate IV in Kitchen Management, SIT40721 Certificate IV in Patisserie, SIT40821 Certificate IV in Asian Cookery.
  • Cook [351411]: SIT30821 Certificate III in Commercial Cookery, SIT31121 Certificate III in Asian Cookery.
  • Pastrycook [351112]: FBP30321 Certificate III in Cake and Pastry or SIT31021 Certificate III in Patisserie.
How do I choose between Western/Commercial and Asian Cookery pathways?
Choose based on the majority of your actual work experience. For mixed backgrounds, submit for a free pre-assessment — our team will recommend the most suitable pathway based on your evidence and demonstrated competencies. Both pathways carry equal weight for migration purposes.
What is the difference between Cook and Chef?
Cook roles focus on hands-on preparation and execution (often under supervision). Chef roles require senior responsibilities such as menu planning, staff supervision, rostering, kitchen management, cost control, and leadership. Your evidence must clearly demonstrate the level you are claiming.
Who can apply for a Skills Assessment?
Anyone with genuine paid full-time (or equivalent part-time) hospitality work experience seeking formal recognition for migration, employment, licensing, or career advancement. Applications are welcome with or without formal qualifications, provided minimum experience thresholds are met.
Do I need formal qualifications to apply?
No. Formal qualifications are not mandatory.

• With relevant formal training: Minimum 3 years full-time paid relevant experience.
• Without formal training: Minimum 5 years full-time paid relevant experience.
Plus at least 12 months full-time paid work in the nominated occupation in the last 3 years.
Can self-employment or family business experience be accepted?
Yes, but it faces stricter scrutiny. It must be proven as genuine paid commercial work. Acceptable evidence includes business registration, bank statements, tax returns, invoices, client contracts, and strong third-party references.
Can students or recent graduates apply?
Yes, provided they meet the minimum paid work experience requirements. Recent graduates with limited experience should gain additional relevant paid hours before applying.
Can I apply while living overseas?
Yes. The entire process is designed for remote completion worldwide. No travel to Australia is required for the standard pathway.
What documents are usually required?
After free pre-assessment you will receive a tailored checklist. Core items include passport, detailed CV, employer references, payslips/tax records, qualifications (if any), and a high-quality video/photo portfolio. All documents must be clear, high-resolution, properly labelled, and uploaded to our secure SharePoint folder.
What makes evidence “Decision-Ready”?
Verifiable, high-quality, consistent documents that fully demonstrate your skills against Australian standards. Poor or incomplete evidence is one of the most common causes of delays or unsuccessful outcomes.
What guidance exists for creating the video portfolio?
Produce 4–5 genuine workplace videos (10–15 minutes each, under 150MB) with clear English narration showing full processes from raw ingredients to finished dishes. Use only real kitchen footage — no staged material.
What is the Technical Interview?
A detailed competency-based discussion with an experienced industry assessor. You explain how your real-world experience meets Performance Evidence and Knowledge Evidence requirements. Assessors explore practical skills, decision-making, food safety, problem-solving, and leadership (for Chef roles).
What interview formats are available?
Remote (worldwide via secure video — most popular) or Face-to-Face (Melbourne campus or selected overseas locations when demand allows).
What does the Interview Preparation Session include?
Overview of requirements, what assessors look for, response structuring guidance, resource introduction, and a rapport-building meeting with your assessor. Highly recommended.
Can I use memory triggers?
Yes, by prior request (simple notes only, plus photos and videos of items you already produced at work — not scripts).
Are there any practical (hands-on) assessments?
No. Your video portfolio plus verbal explanations during the interview serve as the practical demonstration.
What support is available if English is a concern?
Preparation sessions help you practise. Memory triggers are allowed. Assessors focus on your trade knowledge and ability to communicate effectively rather than perfect fluency.
What food safety knowledge is required?
Solid practical understanding of FSANZ guidelines, HACCP principles, hygiene, cross-contamination prevention, temperature control, allergens, and sanitising procedures.
How much does it cost and how do I pay?
Fees are paid directly to TRA (see our Fees page). Payment is via Visa or MasterCard through the TRA portal. We provide the correct payment code when you are ready.
How long does the assessment process take?
Pathway 2 is often completed within 4 weeks (subject to complete documentation). Overall timelines typically range from 8–12 weeks.
How long is a positive TRA Outcome Letter valid?
3 years from the date of issue. There is no renewal option — an expired letter requires a new full application.
What happens after a successful outcome?
You can use the TRA Outcome Letter (and AQF qualification for Pathway 1) to support your visa application with the Department of Home Affairs.
What if my application is unsuccessful?
You receive detailed feedback. You may apply for one Review or Re-assessment (fees apply). Our team can advise on next steps.
What are common reasons for unsuccessful outcomes?
Insufficient verifiable recent experience, inconsistent or poor-quality documentation, weak video portfolio, inadequate interview performance, or mismatch between claimed role and evidence.
What happens to my documents after assessment?
They are handled securely. We do not return originals — always keep your own copies.
How can migration agents work with you?
We welcome ethical collaboration. Agents can refer clients and receive process updates. All evidence and interviews must remain the applicant’s genuine work.
What preparation tips do you recommend?
Start with free pre-assessment, organise consistent evidence, create high-quality narrated videos, review FSANZ/HACCP resources, and attend a preparation session. Focus on authentic demonstration of your real experience.
