Patisserie graduate Alison Marshall is finding her stride at the renowned Burch & Purchese Sweet Studio in South Yarra. Acclaimed for their exquisite creations and original flavour combinations that dazzle the palate-the studio is the brainchild of pastry chef extraordinaire Darren Purchese, and his wife, acclaimed chef and Angliss Alumni Cath Claringbold. Pairing science with sweet, the studio creates cakes, jellies, sponges, mousses and every kind of sweet confection you can imagine.
Alison said, “Studying at William Angliss Institute gave me the platform to transform my passion into a career. Whilst honing my skills in my own kitchen, the Institute afforded me the formal training I needed to get a foothold in the patisserie industry.”
Her achievements are a testament to her motivation, “I started off doing six months work experience whilst I was studying and once I had finished my schooling I was offered a full time position. I’m learning lots, moving around the kitchen doing different things and working with a fantastic team of chefs.”
Studying the Certificate IV in Patisserie gave Alison essential industry exposure “I chose William Angliss Institute primarily because of its well renowned industry ties. I gained valuable experience at the Kit Kat Chocolatory after applying through the Institute in my first term, and I was also privileged enough to attend a study tour in Dubai where I was able to work with professionals and experience patisserie in luxury hotels first-hand.”
“The most beneficial parts of the course that I found was definitely the hands-on experience you gain through the practical classes. I found the Chocolate and Gateau classes to be of most interest and use to me heading into the industry because these are the areas I see being the biggest parts of my career.” Alison said.
Considered as a great asset to the team at Burch & Purchase, Alison’s hard work and passion continues to be rewarded and her future looks very bright.
“My ultimate goal for the moment is to continue working hard at Burch and Purchese and learn as much as I can. At Angliss I learnt the value of hard work and that any challenge can be a valuable learning experience,” Alison said.
